Ingredients
| 1 box | jiffy cornbread mix |
| 1 stick | butter or margarine (divided in 1/2) |
| 1 c | chopped onion |
| 2 c | shredded cheddar cheese |
| 1/3 c | milk |
| 4 | eggs, slightly beaten |
| 1 (10oz) pkg | chopped frozen broccoli |

Directions
Preheat oven to 350 degrees. In oven, melt 1/2 stick of butter in a 9x13 baking dish.Melt the other 1/2 stick of butter in a pan or the microwave and mix in with the rest of the ingredients. Pour into baking dish and bake at 350 degrees for 30-35 minutes or until golden brown on top.

OMG Paula, i had a friend, she was egyptian. she made me something very similar to this but she used cottage cheese instead of shredded cheddar! and it was so moist and so dang good..i got the recipe from her but ive lost it, it was more than 12 years ago. how could we incorporate this? (due to the extra moisture)
