Broccoli Cornbread Casserole

Paula's Story

This is a favorite when my girlfriends come over for a "hen party". We like it "as is", but it can be made into a complete meal by adding browned ground beef or chicken.

Ingredients

1 box
jiffy cornbread mix
1 stick
butter or margarine (divided in 1/2)
1 c
chopped onion
2 c
shredded cheddar cheese
1/3 c
milk
4
eggs, slightly beaten
1 (10oz) pkg
chopped frozen broccoli

Directions Step-By-Step

Preheat oven to 350 degrees. In oven, melt 1/2 stick of butter in a 9x13 baking dish.

Melt the other 1/2 stick of butter in a pan or the microwave and mix in with the rest of the ingredients. Pour into baking dish and bake at 350 degrees for 30-35 minutes or until golden brown on top.

quick question is the mix already prepared are do we top it dry?

Oh, the reason I'm posting this is because I noticed a ways back that someone was asking for the recipe like this but it also had cottage cheese in it & they were wondering about the proportions.....

Ok, I found this recipe that also has cottage cheese in it. It is a little different, has no milk, uses less cheddar cheese & 2 boxes of cornbread mix. Beat cottage cheese, butter & egg. Stir in cornbread mix until moist. Fold in broccoli, onion & 1 cup cheddar cheese. Pour in sprayed pan & sprinkle with 1/2 cup cheese. The temp was 375 degrees, same size pan. Think I'll use the recipe without cottage cheese because I wanted to add some rotisserie chicken. Both recipes got 5 stars & great reviews!


1 C cottage cheese
3/4 C butter
4 eggs
2 boxes cornbread mix
10 oz. broccoli
1 lrg. onion
1 1/2 C cheddar cheese

This is just the casserole I wanted for Easter dinner. My husband loved it too! Very moist and great hot out of the oven.
