Ingredients

1 box jiffy cornbread mix
1 stick butter or margarine (divided in 1/2)
1 c chopped onion
2 c shredded cheddar cheese
1/3 c milk
4 eggs, slightly beaten
1 (10oz) pkg chopped frozen broccoli

Paula's Notes:

This is a favorite when my girlfriends come over for a "hen party". We like it "as is", but it can be made into a complete meal by adding browned ground beef or chicken.

 

Directions

Preheat oven to 350 degrees. In oven, melt 1/2 stick of butter in a 9x13 baking dish.

Melt the other 1/2 stick of butter in a pan or the microwave and mix in with the rest of the ingredients. Pour into baking dish and bake at 350 degrees for 30-35 minutes or until golden brown on top.

OMG Paula, i had a friend, she was egyptian. she made me something very similar to this but she used cottage cheese instead of shredded cheddar! and it was so moist and so dang good..i got the recipe from her but ive lost it, it was more than 12 years ago. how could we incorporate this? (due to the extra moisture)

Michelle, I would just try it with all the same ingredients and replace the cheese...............the extra moisture may not make a difference. If you try it, please let me know how it comes out!

i think i'm gonna try it tonight so i can slip the vegetables into the meal lol my son who loves cornbread but hates veggies lol...i'll show him!!

oh its ok lol i made it and it was awesome, but i used my Morrison corn kit and a morrison bis kit then i followed your recipe and the cottage cheese made it extremely moist it was oh soooo good.

Glad you enjoyed it. How much cottage cheese did you put? I want to try it with the cottage cheese and see which one I like best. :-)

i used a 16 oz large curd, which equals the 2 cups of cheddar

I wouldn't be above splitting the differnce with the cheese or just adding some more cheddar along with the cottage cheese. I love cheese and it would seem that the cottage cheese would add moisture.
I will have to experiment with this.

My daughter just made this recipe this morning and she decided to add diced mushrooms and yellow and red bell peppers. She also used a colby,jack, cheddar cheese blend. It came out wonderful and is very delicious!
