This is a side dish my mother has made for years, & eventually, I started making it too! My daughter wouldn't think of a holiday meal not including her favorite dish: Broccoli Casserole!

Ingredients For broccoli casserole from mom (by sharon)

  • cooking spray
  • 2 pkg
    (10 oz. each) frozen broccoli cuts, florets, or chopped
  • 1/2 md
    onion, chopped fine
  • 2 Tbsp
    light butter or substitute
  • 1 can
    (10 oz.) condensed cream of mushroom soup
  • 1 can
    (10 oz.) condensed cream of celery soup
  • 1/4 - 1/2 lb
    velveeta processed cheese (regular or light), cut up
  • 1 can
    (10 oz.) milk, 1-2%
  • 1/3 c
    dry minute rice, white or brown
  • bread or cracker crumbs (optional)
  • melted butter (optional)

How To Make broccoli casserole from mom (by sharon)

    Spray baking dish with cooking spray. Preheat oven, to 350 degrees.

    Put broccoli & onion in baking dish. Cook in microwave (about 5 mins.). Stir in 2 Tbs. light butter or substitute.

    In a bowl, mix soups, and milk. Mix well & pour over broccoli in prepared baking dish. Cook rice per package directions. Distribute rice over top & stir into mixture.

    Take cubes of Velveeta & put over mixture. Push each on down into mixture.

    Cook in oven, uncovered, for 30–40 mins. Stir a couple of times. If it is too dry, add a little water or milk & stir. If it is too runny, cook a little longer.

    If using crumbs, sprinkle them over casserole, and drizzle with melted butter 5-10 mins., before its to be removed from oven. After removing from the oven, allow to sit about 5-10 minutes, before serving. Makes about 6 servings.
