With so much zucchini coming out of the garden. I was looking for ways to use all that was coming out.
Found this in an old cook book. Added some things of my own. I hope that you enjoy this if you try it. I think it is very good..

2 lb
1 1/3 c
mild chedder cheese, shredded
1/2 c
cottage cheese
1/2 c
chopped nuts, your choice
1 c
button mushrooms , cooked.
1/2 lb
bacon. cooked and chopped.
4 large
eggs, betten.
3/4 c
bread crumbs, seasoned
3 Tbsp
chopped parsley,
2 Tbsp
chopped thyme
salt and pepper, to taste.
5 Tbsp
real butter, devided.

Directions Step-By-Step

in a non-stick skillet. add 1 1/2 tablespoon butter. Cook mushroom and bacon till bacon is crisp. Remove and crumble.
Wash zucchini and cut crosswise into 1/4 inch slices.
Pre-heat oven to 375.
Combine cheese, nuts, parsley, thyme, salt and pepper, bacon, and bread crumbs. mix well,
In a baking dish layer zucchini then some of the sauce. Layer till all the zucchini is used up.
Pour butter and bacon drippings over the backing dish. Then dot with remaining butter.
Back at 375 for about 45 minutes.

Serve with your choice of meat.
