Blackeyed Peas with Bacon

My husband doesn't like blackeyed peas; but, he will eat these!!

Stove Top

Ingredients

1 lb
dried blackeyed peas, rinsed and sorted
1/2 lb
bacon, cooked and crumbled
1 1/2 c
chopped onion
1 clove
chopped garlic
2 TBSP
butter
1/2 tsp
dried thyme
salt to taste
additional crumbled bacon

Step-By-Step

1Boil peas, bacon in enough water to cover in a large kettle. Boil for 2 minutes,cover, remove from heat and let stand for 1 hour. Do not drain.

2In a skillet saute onion and garlic in butter until tender. Add to pea mixture along with thyme and salt.

3Return to the heat, cover, and simmer for 40 minutes or until peas are soft. Top with addition crumbled bacon if desired
