Betty and my mom were best friends from childhood up into their seventies. Mom passed away a couple of years ago, but Betty still keeps in touch. She gave me this scrumptious recipe about a year ago.
I was never really a fan of yams, but I think this recipe has converted me!

Ingredients

4 medium
(or larger) yams, cooked and mashed
1/2 tsp
salt
1 tsp
cinnamon
1 tsp
nutmeg
1/4 tsp
ground ginger
grated rind (zest) of one orange

8 ounce can crushed pineapple, drained

beaten eggs
1 Tbsp
butter, melted
1/4 c
brown sugar, mixed with 1/2 cup sour cream
1/4 c
slivered almonds

miniature marshmallows

Directions Step-By-Step

Pre-heat oven to 350º.

Mix well all ingredients except brown sugar mixture, almonds and marshmallows. Spoon into greased baking casserole.

Spread brown sugar and sour cream mixture over the top of casserole. Sprinkle slivered almonds over top, then scatter marshmallows over all.

Bake at 350º for 40 to 60 minutes, or until puffy and lightly browned.
