Ingredients

1/2 c	sugar
1/2 c	vinegar
1 c	beet juice
2 tsp	mustard seed
1 Tbsp	grated onion
1 c	diced celery
2 Tbsp	chopped green pepper
1 c	beets (shoe string variety) reserve juice
1 pkg	lemon jello

My grandmother always had this with the Thanksgiving turkey and it went well w/ our Christmas ham.

Don't like beets? This tasty salad may just change your mind! It's a miracle I was able to snap this photo... I couldn't stop eating it!

Directions

Combine in pan: sugar, vinegar and beet juice from can of beets. Bring to a boil. Take off burner after it starts to boil.

Add the package of lemon jello, stir and let cool.

ADD: Add the mustard seed, onion, celery, green pepper, and beets to jello mixture and mix well. Place in serving dish and refrigerate until jelled.

hi this looks great and I love beets,but what do you mean when you say add the lemon juice,how are you preparing the jello for this?thanks

I was kind of wondering the same thing until I went back and re-read the recipe. I think she means add the package of lemon jello and NOT lemon juice. Just my thoughts. . .

Step 2 says to add the pkg. of lemon juice. I don't see lemon juice listed under ingredients. How much lemon juice should be used? I'm dying to try this recipe.
