Depending on where you grew up, you may have called these pickled beets! Either way these are a family must have every fall.

We love them with casseroles, sandwiches, or just by themselves.

Ingredients

3 qt
beets, cooked until tender
2 c
sugar
2 tsp
cinnamon
1 Tbsp
whole allspice
1 1/2 tsp
salt
3 1/2 c
vinegar

1To cook beets, cut tops off, rinse excess dirt off and place in large kettle. Bring to a boil, decrease heat and continue to cook until tender.

2Place beets in large kettle.

3Mix rest of ingredients well and pour over beets in large kettle to cover. Bring to a boil over medium heat and decrease heat to simmer. Simmer for 15 minutes.

4Seal in clean, hot jars.
