Beer-Batter Onion Rings

- 1 c
- all purpose flour
- 1 tsp
- 1/4 tsp
- 1 Tbsp
- egg yolks
- 3/4 c
- 2 large
- white onions, sliced 1/4 inch thick
- oil for deep frying
1Mix the flour, salt, pepper, oil and yolks together.
2Gradually whisk in the beer.
3Refrigerate the batter 3 1/2 hours to rest before using.
4Slice onions, and dip them in the batter.
5Deep-fry in 375 degree oil until golden brown.
6This batter also works well on other vegetables besides onion rings--and it's great on fish, too.
