Bake potatoes in microwave or oven until done. I used day old baked potatoes that I had refrigerated so they cut very nicely, but fresh baked ones would work too. Let them cool enough to handle.
Cut them in a crossways direction, but not all the way through. Just load on some butter and grated cheese and microwave until the cheese has melted. Remove and top with Pico de Gallo. Sour cream would be a great add on as well.
