This was a pure accident. I had a party over the weekend, and made too many potatoes. The next day, while I was wondering what to do with all those extra potatoes, I came up with this idea. Next time, I will make extra and make this for the next football game.

Ingredients For baked potato salad

2baking potatoes

1/2 cchopped green onions

1/2 cbacon bits

1/2 cshredded cheese

1/2 csour cream
How To Make baked potato salad

1bake the potatoes until fork tender in a 350 degree oven.

2let them cool, best the next day. Peel the skin and dice the potatoes.

3Add the rest of the ingredients. Salt and pepper to taste.
