Baked Green Tomatoes
These make a good side dish at a BBQ.
This recipe was in a church cookbook dated 2007.
- 1 c
- seasoned bread crumbs
- 1/4 c
- olive oil, extra virgin
- 3 Tbsp
- 3 clove
- garlic, minced
- 4 Tbsp
- freshly grated parmesan cheese
- 3 large
- green tomatoes, sliced into 1/4 inch slices
- sea salt and freshly ground black pepper as desired (depending on amount of seasoning in bread crumbs)
Combine bread crumbs, olive oil, water, garlic, and cheese in a small bowl.
Place tomatoes on cookie sheet in a single layer. Top each slice of tomato with an equal portion of bread crumbs mixture. Sprinkle with a little sea salt and freshly ground black pepper if needed.
Bake for 35-40 minutes or until topping is light brown.
