Asparagus and Swiss Cheese Tart

- 1 pkg. frozen cut asparagus (10 oz
- 1 1/2 cups heavy cream
- 2 eggs
- 1/4 t. nutmeg
- 1 t. salt
- 2 1/4 cup coarsely grated swiss cheese
1Preheat oven to 450. Prepare pie crust or use store bought. On floured pastry cloth, roll pastry to form 13" circle. Use to line 11" pie plate. Flute edge. Prick bottom and side of pastry all over with fork. Bake 10 minutes. Prick again if needed. Let cool. Reduce oven temperature to 375.

Boil, covered, 5 minutes until tender. Drain. Dry on paper towels to remove excess moisture. Put in blender with cream, egg, nutmeg and salt. Blend at high speed 1 minute or until smooth. Stir in 1 1/2 cups grated cheese to mix well.
3Turn into pastry shell. Bake 20 minutes. Remove from oven. Sprinkle remaining 3/4 cup grated cheese over top, forming a lattice pattern. Return to oven about 3 minutes or until cheese melts slightly. Serve warm. Serves 6
