Ingredients

2 artichokes
1 lemon
4 clove garlic
GARLIC LEMON BUTTER
1/3 stk unsalted butter
1 tsp granlated garlic or 2 cloves minced
1 lemon juiced, fresh

Lou's Notes:

Some of these are large enough to make a meal out of on their own. I enjoy them with garlic lemon butter to dip the leaves in, pretty common in california is mayo. But the great thing about being an adult is you can make your own rules. :-)

 

Directions

Cut about 1 inch from artichoke tops, trim a little off stem, and trim tips

Place in stockpot with 4 whole garlic cloves, and 1 lemon sliced into about 6 rounds, and enough water to half cover the artichokes

Bring water to a boil and let cook at a low boil until a fork inserted into the stem end goes in easily. About 20-40 minutes depending on how large.

For the dip I put all 3 ingredients into a microwave safe bowl and give it a quick zap until butter is melted

had I not already been to the store today, I might well be having these tonight! I need to use up some fresh broccoli and asparagus before I buy more veg though, but will be trying these this weekend! Do you have any good recipes for asparagus?

Normally just steam my veggies and instead of using butter I drizzle a little spicy vinegar over them. yum.

Samantha, I have made Asparagus 100 way's and I found roasting them with a little olive oil, salt, pepper (massage all over)then roast for about 15 min then taking them out and grating a light dusting of fresh Parmesan cheese (the real stuff)on them and roasting them for about 7-10 more is the best way to go! I just love the flavor, the tips almost tast like popcorn to me when they get a little crisp from roasting.
