Cut about 1 inch from artichoke tops, trim a little off stem, and trim tipsPlace in stockpot with 4 whole garlic cloves, and 1 lemon sliced into about 6 rounds, and enough water to half cover the artichokesBring water to a boil and let cook at a low boil until a fork inserted into the stem end goes in easily. About 20-40 minutes depending on how large.For the dip I put all 3 ingredients into a microwave safe bowl and give it a quick zap until butter is melted

Samantha, I have made Asparagus 100 way's and I found roasting them with a little olive oil, salt, pepper (massage all over)then roast for about 15 min then taking them out and grating a light dusting of fresh Parmesan cheese (the real stuff)on them and roasting them for about 7-10 more is the best way to go! I just love the flavor, the tips almost tast like popcorn to me when they get a little crisp from roasting.
