Ingredients

3 jar(s) plain whole beets
1/2 tsp salt
3 c white vinegar
3-4 c white sugar
1/2 Tbsp whole cloves
1 tsp whole allspice

Angela's Notes:

This is my Grandmother Elsea's recipe and is one of my favorite things to can in the Fall. The recipe is easy and the beets are just right. Enjoy

 

Directions

Drain the beets in a colander.

Heat vinegar, sugar and spices to a boil. *Add sugar to your taste, but it should be syrupy and sweet**

Add the drained beets to the boiling syrup. Return to a boil and take off heat.

Immediately put into hot quart canning jars. Screw on lids and caps, process according to your canner directions or Ball.com.

Allow to set overnight and they are ready to eat ! These are so good and nobody will ever know that you cheated a little !

pickled beets i love them.My grandma made them too . She also made pickled bologne and pickled eggs too.When i was growing up lot people made these .I know in kentuckey they did.

thve been looking for picked green tomatoes and green onions my brother in law use to make them for me all the time never thought he would up and die on me

Angela, this is an answer to prayer! I have been trying to find a recipe that sounded like my grandmother's pickled beets for ever! My grandfather used to keep a huge garden, so they grew everything and canned everything. Since I don't have a garden, this is perfect! I can't wait to try these!

Angela, I too, am happy to find your recipe! My "grandmother-in-law" used to make these-but we called them spiced beets. I have looked for her recipe for years and decided to try this web site. Your recipe sounds exactly like hers. Thank you very much!!

Brenda, I am so tickled ! These are so good, I love my cold right out of the frig. My grandmother Elsea turned 95 this year and is still cooking away, she is so amazing. I am so glad I could help bring back pleasant memories of your sweet grandmother in law. Funny how food can transport us back to another time and place.

Nancy, I have never ventured and done it with fresh beets. I would just eye ball it !
