My friend in Memphis sent me this recipe, that was sent to her, by her friend. This sweet potato casserole is sweet & creamy & then again, crunchy, thanks to the cereal-pecan topping.

Ingredients For sweet potato casserole from a friend of a friend

  • PREPARATION
  • cooking spray, butter, or shortening to prepare casserole dish
  • FILLING
  • 3 c
    sweet potatoes, mashed (1 large can)
  • 2 lg
    eggs
  • 1 c
    sugar
  • 1 stick
    light butter, melted
  • TOPPING
  • 1 c
    brown sugar
  • 1/3 c
    light butter or margarine, melted
  • 1 c
    cornflakes or total, crushed
  • 1 c
    finely chopped pecans

How To Make sweet potato casserole from a friend of a friend

    PREPARATION: Spray casserole dish with cooking spray or grease with butter or vegetable shortening. Preheat oven to 350° F.

    FILLING: Mix ingredients, and pour in prepared casserole dish.
  • 3
    TOPPING: Mix ingredients, and crumble on top of filling.
  • 4
    Bake at 350° F for 20-30 minutes. Remove from oven. Let stand for 5-10 minutes, before serving.
