My friend in Memphis sent me this recipe, that was sent to her, by her friend. This sweet potato casserole is sweet & creamy & then again, crunchy, thanks to the cereal-pecan topping.

Ingredients For sweet potato casserole from a friend of a friend
- PREPARATION

cooking spray, butter, or shortening to prepare casserole dish
- FILLING

3 csweet potatoes, mashed (1 large can)

2 lgeggs
-
1 csugar
-
1 sticklight butter, melted
- TOPPING
-
1 cbrown sugar
-
1/3 clight butter or margarine, melted

1 ccornflakes or total, crushed

1 cfinely chopped pecans
How To Make sweet potato casserole from a friend of a friend

1PREPARATION: Spray casserole dish with cooking spray or grease with butter or vegetable shortening. Preheat oven to 350° F.

2FILLING: Mix ingredients, and pour in prepared casserole dish.

3TOPPING: Mix ingredients, and crumble on top of filling.

4Bake at 350° F for 20-30 minutes. Remove from oven. Let stand for 5-10 minutes, before serving.
