Don't you just love beans and rice? They seem to go together like ham & eggs, salt & pepper, Ben & Jerry's--whoops, getting off the subject! This is such a simple and delicious dish and it's ready in minutes.

Ingredients

1 Tbsp
butter
1/2 c
bell pepper, chopped
1/2 c
onion, chopped
1 can(s)
(15.5 oz.) kidney beans, drained
2
chicken bouillon cubes
2 c
water
1/2 tsp
hot sauce
2 c
quick cooking brown rice, uncooked

Step-By-Step

1In a large skillet on medium heat, saute bell pepper and onions in butter until tender, stirring frequently.

2Stir in water, kidney beans, chicken bouillon and hot sauce. Bring to a boil. Stir in the rice and cover.

3Remove from heat and let stand for 5 minutes. Serve immediately.

This can either be a main dish with a salad and rolls, or it can be a side dish accompanying the meat of your choice.
