Ingredients

2 c
heavy cream
1 1/2 Tbsp
butter, unsalted
1 Tbsp
minced shallots
1/2 c
parmigiano-reggiano, grated
1/2 c
finely chopped basil leaves
dash of hot sauce or two
2 c
cooked peas

Step-By-Step

1Bring the cream to a boil in a saucepan. then lower it to a simmer and let it reduce slightly 3 or 4 minutes.

2Melt the butter in a small skillet, and cook the shallots over med-low heat until translucent, 3 minutes.

3Add the cooked shallots and the cheese to the cream, and cook until lightly thickened, 3 minutes. Add the basil, hot sauce, and peas, heat through and serve immediately.
