This is from Better Homes and Gardens, New Cook Book, Fourteenth Edition. A lovely orange & ginger-spiced sauce for sugar snap peas. A great Asian side dish!

Ingredients For sugar snap peas with orange-ginger butter

3 cfresh or frozen sugar snap peas

1 tspgrated fresh ginger

1 Tbspbutter or margarine

1 Tbsporange marmalade

1 tspcider vinegar

1/8 tspblack pepper
How To Make sugar snap peas with orange-ginger butter

1Remove strings and tips from peas. Cook fresh peas, covered, in small amount of boiling salted water 2-4 minutes or until crisp-tender. (Cook frozen peas according to the package directions.) Drain well.

2Meanwhile, in a small pan cook ginger in hot butter for 1 minute. Stir in marmalade, vinegar, and pepper; cook and stir until marmalade melts. Pour over hot cooked peas; toss to coat. Makes 4 servings.
