Roasted Asparagus

Ingredients

1 1/2 lb
fresh asparagus
1 1/2 c
tomato, grape/cherry,halved
3 Tbsp
pine nuts
3 Tbsp
canola oil
2 clove
garlic,minced
1 tsp
kosher salt
1/2 Tbsp
pepper
1 Tbsp
lemon juice
1/3 c
parmesan,cheese,greated
1 tsp
lemon peel, greated

Directions Step-By-Step

Put asparagus, tomatoes and pine nuts in a foil-lined baking sheet. Mix 2 Tablespoon oil, garlic, salt, and pepper; toss with asparagus.

Bake at 400 for 15 to 20 minutes or just tender. Drizzle with remaining oil and lemon juice; sprinkle with cheese and lemon peel. Toss to combine.
