Cheesy Corn & Black Bean Dip

This is a dip I created for Nacho or Tortilla chips. It is full of Beans, cheese, and lot's of veggies. It is a favorite in my home. Great for a party or appetizer. I have even had it for lunch. Enjoy all!

Ingredients

THIS DISH CAN BE SERVED AS A DIP OR A SIDE SALAD. SERVE WITH DORITOS OR TOSTITO'S AS A DIP. CRUSH CHIPS AND SPRINKLE ON TOP TO SERVE AS A SALAD

can of crisp corn,or 11 ounces of fresh cooked corn
15 oz
can of black beans
1/2 c
diced green bell pepper
1/2 c
diced red bell pepper
1/2 c
diced red onion or vidalia onion
1/2 c
hellman"s mayonaise
1/2 tsp
cummin
1/4-1/2 tsp
cayenne pepper
2 c
taco seasoned cheese in bag
1 c
chopped grape tomatoes
1 c
optional for serving as a salad. crushed nacho cheese dorito's
2 Tbsp
lime juice
1/8 c
chopped green onion

Directions Step-By-Step

Drain the corn.
Rinse and drain the black beans. Empty both in to a large bowl. Add the lime juice and toss together.

Chop the Red and green bell peppers. Dice the onion,and add it to the corn,and beans. Stir together well.

Mix the mayonnaise with the Cumin,and Cayenne pepper.
Add the spiced mayonnaise in to the bean mixture. Stir well. Fold in the cheese,and mix well. Chill for at least an hour.

Before serving. Top with chopped grape tomatoes mixed with green onion. Serve with Any style Tortilla chip. Also great with nacho Dorito's.
