MARINATED CUCUMBERS & ONIONS W/TOMATOES

Ingredients

1
english cucumber
1 Tbsp
salt
1/2 c
water
1/2 c
apple cider vinegar
1/2 c
sugar
4 medium
tomatoes, cut in chunks

Step-By-Step

1Slice cucumber into very thin slices.
Put in bowl with salt
Refrigerate for 2 hours

2Squeeze by hand in small batches the liquid from the cucumbers. Pat with paper towel to remove most of the liquid and the salt.

3Heat water, vinegar, and sugar until sugar is melted.
Let cool.
Pour over cucumbers.

4Add pepper to taste.
Refrigerate.

5Cut tomatoes into chunks.
Pour off some of the liquid from the cukes and onions.
Add to tomatoes just before serving.
