I have been wanting to come up with a recipe of something different for sweet potatoes and this is the recipe I came up with. My husband loved it as did I. This is definitely a keeper for us. I hope if you try it you enjoy it also.
Peel and dice potatoes, small dices. In skillet add butter and olive oil, when butter has melted add potatoes, salt and pepper, and cayenne pepper. Cook over medium heat until potatoes begin to soften. Add syrup, brown sugar and pecans, stir, let potatoes cook about 5 minutes longer to continue to get soft.
