carrots, cut into 1/4 inch slices (about 3 cups)
fresh mint, chopped (or 1 tsp. dried mint)
In a 12 inch skillet, heat 1 inch of water to boiling.
Add carrots and re-heat to boiling.
Reduce heat and simmer 10 minutes until tender-crisp. Drain VERY well.
Toss with honey and mint.
