Ingredients

6 medium
carrots, cut into 1/4 inch slices (about 3 cups)
1 Tbsp
honey
1 Tbsp
fresh mint, chopped (or 1 tsp. dried mint)

Step-By-Step

1In a 12 inch skillet, heat 1 inch of water to boiling.
2Add carrots and re-heat to boiling.
3Reduce heat and simmer 10 minutes until tender-crisp. Drain VERY well.
4Toss with honey and mint.
