Nice simple side dish from Cooking Light, April 1995.

Ingredients

3 1/2 lb
green beans
2 Tbsp
olive oil
1/2 c
shallots, minced
2 Tbsp
water
1 tsp
salt
1/4 tsp
pepper

Step-By-Step

1Trim ends from beans, and remove strings.
2Drop beans into a large stockpot of boiling water; cook 10 minutes or until crisp-tender. Drain.
3Heat oil in stockpot over medium heat.
4Add shallots; sauteā€š 3 minutes or until tender.
5Add green beans and water; cook 3 minutes or until beans are tender, stirring occasionally.
6Remove from heat, and stir in salt and pepper.
