This is a really great way to get picky eaters to eat eggplant. Kids seem to love eggplant this way.

Ingredients For eggplant casserole

  • 1 md
    eggplant, peeled and cut into 1-inch cubes
  • 1 lg
    onion chopped
  • 1/2 stick
    butter
  • 2 lg
    eggs beaten
  • 1 c
    cracker crumbs
  • salt to taste
  • white pepper to taste
  • 1 can
    cream style corn
  • 1 md
    red pepper diced
  • 1 c
    grated sharp cheddar cheese

How To Make eggplant casserole

  • 1
    Preheat oven to 350 degrees. Cook eggplant in water till tender. Drain
  • 2
    Sauté onion in butter, add eggplant and the rest of the ingredients except cheese and transfer to a baking dish.

    Sprinkle cheese on top and baked until puffed, about 15 to 20 minutes
