Ingredients For eggplant casserole

1 mdeggplant, peeled and cut into 1-inch cubes

1 lgonion chopped

1/2 stickbutter

2 lgeggs beaten

1 ccracker crumbs

salt to taste

white pepper to taste

1 cancream style corn

1 mdred pepper diced
-
1 cgrated sharp cheddar cheese
How To Make eggplant casserole

1Preheat oven to 350 degrees. Cook eggplant in water till tender. Drain

2Sauté onion in butter, add eggplant and the rest of the ingredients except cheese and transfer to a baking dish.

3Sprinkle cheese on top and baked until puffed, about 15 to 20 minutes
