Another great recipe gleaned from a friend. Great versatility. Serve over rice, poached eggs on toast, sliced hard cooked eggs, or rice vermicelli, etc.

Ingredients

1/2 large
red onion, finely chopped
butter or extra virgin olive oil for sauteing
3 clove
garlic, finely chopped
1 tsp
cumin, ground
1 tsp
coriander, ground
1 tsp
chili powder
1/2 tsp
turmeric, ground
12 oz
white or baby bella mushrooms, sliced
1/2 tsp
salt
1 medium
tomato, diced
1/2 medium
green bell pepper, diced
3 Tbsp
fresh cilantro, chopped

Step-By-Step

1Saute onion in butter or olive oil until soft, about 3-4 minutes.

2Add garlic and saute another minute.

3Add cumin, coriander, chili powder, turmeric and saute an additional minute.

4Add mushrooms and saute until they have released their moisture.

5Add tomatoes, green pepper, and salt. Saute until peppers just begin to soften.

6Add fresh cilantro and remove from heat.

May be served over basmati rice, cous cous, sliced hard cooked eggs, poached eggs and toast, rice vermicelli, etc.
