Over forty years ago, my mom bought an electric knife(all the rage at the time. It came with a small paperback cookbook. I tried this recipe from the book and it's been a favorite of family and friends ever sense. Enjoy!

Ingredients

medium size zucchini, washed
1
onion, large and peeled
1/2 lb
mozzarella cheese
2 Tbsp
butter
1 tsp
onion salt
1/4 tsp
oregano
1
8-oz. can tomato sauce
salt and pepper to taste (optional)

Step-By-Step

1Preheat oven to 350 degrees.
2Cut zucchini into 1/2 inch slices.
3Thinly slice onion.
4Thinly slice mozzarella cheese.
5Cook zucchini and onion slices together in a covered skillet in butter until tender.
6Add onion salt, oregano and tomato sauce. Salt and pepper to taste (optional).
7Pour mixture into a 1 1/2 quart shallow casserole.
8Top with mozzarella cheese slices.
9Bake 30 minutes.
10Enjoy!
