Colorful Spaghetti Squash

Quick and Easy, full of flavor and color.
I used ingredients I had on hand, and came up with this dish. I hope you enjoy it!

Ingredients

1
spaghetti squash, halved, seeds removed
1 tsp
olive oil
2 Tbsp
butter
3
green onions, chopped
1 small
zucchini, chopped
1-2
sweet mini red peppers
1 clove
garlic, minced
1 Tbsp
lemon juice
1/4 c
parmesan cheese
1/4 c
feta cheese
salt and pepper

Step-By-Step

1Preheat oven to 400
2Rub halves of spaghetti squash, inside and out, and a sheet pan with the olive oil.
3Place squash cut side down in pan. Top with a tent of aluminum foil. Bake 20 minutes until skin is soft when pierced with a fork. Scrape insides out with fork and keep warm.
4Meanwhile, Melt butter in skillet. Add vegetables and garlic. Saute until tender.
5Add cooked squash. Saute until flavors mix, 5 minutes. Add lemon juice, Parmesan cheese, salt and pepper to taste. Saute 5 more minutes until heated through.
6Top with Feta cheese.
