Cauliflower "Rice"

Ingredients

2 Tbsp
coconut oil
1 medium
head cauliflower
1/2
white onion
1-2 clove
garlic, peeled
1/4 c
water or broth
salt, to taste
white pepper, to taste
chopped parsley or other favorite fresh herb
other seasoning, your choice such as italian seasoning, etc. (optional)

Step-By-Step

1Grate the cauliflower, onion and garlic *or* PULSE in a food processor until the cauliflower resembles rice grains.
2Heat coconut oil in a sauté pan over medium high heat. Sauté onion and garlic for about 3 minutes. Add cauliflower, stir well.
3Add the water or vegetable broth, sea salt and pepper. Sautè for about 5 minutes until cauliflower is slightly tender.
4Place cauliflower in serving bowl and top with chopped parsley (optional). Serve hot.
