- 2 Tbsp
- coconut oil
- 1 medium
- head cauliflower
- white onion
- 1-2 clove
- garlic, peeled
- 1/4 c
- water or broth
- salt, to taste
- white pepper, to taste
- chopped parsley or other favorite fresh herb
- other seasoning, your choice such as italian seasoning, etc. (optional)
1Grate the cauliflower, onion and garlic *or* PULSE in a food processor until the cauliflower resembles rice grains.
2Heat coconut oil in a sauté pan over medium high heat. Sauté onion and garlic for about 3 minutes. Add cauliflower, stir well.
3Add the water or vegetable broth, sea salt and pepper. Sautè for about 5 minutes until cauliflower is slightly tender.
4Place cauliflower in serving bowl and top with chopped parsley (optional). Serve hot.
