I saw this recipe in a magazine while at my doctor's office. I served it for dinner as a side to baked chicken. My family loved it!

Ingredients

1
head of cauliflower, separated in florets
1
packet dry good seasons italian dressing
2
eggs
1/4 c
grated parmesan cheese
parchment paper

Step-By-Step

1Pre-heat oven to 325 degrees
Grate or process the cauliflower florets until they resembled grains of rice. You can also use a mini chopper.
2Next, combine cauliflower, italian dressing mix, eggs, and parmesan cheese, and mix well.
3Place parchment paper on a rimmed baking sheet. Form cauliflower mixture into a square shape, approximately 1 inch thick. Bake 40 minutes. Using another parchment lined baking sheet, place on top of cauliflower pan, and flip cauliflower over on other side. Bake 15-20 minutes more.
4Let it rest for 5 minutes, then slice into serving pieces.
