cassies grilled sweet corn salad

Had some delicious sweet corn, so this is what I threw together...I used what I had on hand...it turned out delicious...I love the taste of the charred corn in this salad...you could use frozen corn that's been thawed and drained. Enjoy! My photos

Ingredients For cassies grilled sweet corn salad

  • 5 - 6 md
    fresh, sweet corn on cob
  • 1 sm
    red onion, diced small
  • 3 - 4 Tbsp
    green or red bell pepper, diced - could grill as well...i didn't
  • 12
    sweet grape tomatoes - halved
  • 3 - 4 slice
    fried crisp bacon & crumbled or real bacon bits
  • 1/4 c
    feta cheese crumbles or asiago would be great
  • kosher salt & cracked black pepper to taste
  • 3 Tbsp
    each - olive oil and rice vinegar or your favorite
  • 1/2 tsp
    dried basil or 1 tsp fresh, chopped
  • red
    pepper flakes to taste - optional

How To Make cassies grilled sweet corn salad

    Preheat your grill. Husk corn and I pour a little olive oil in my hand and rub each cob until lightly coated...salt and place on grill. I grill just until some char marks and most of the starchiness is gone...about 5 - 6 minutes, turning frequently. Let cool, then I use my mandolin to remove from cob...can use a sharp knife.

    Place pepper, onion, tomatoes in a bowl, then add the cooled corn.

    In a small dish, mix the vinegar, salt, pepper, oil and basil. Pour over corn mixture and toss well to coat. Taste to see if needs more seasonings. Chill for a few hours, then before serving - toss in some bacon and feta cheese if desired. Enjoy!
