Ingredients

1 lb
carrots, coarsely chopped
1/2 c
butter
1 tsp
pure vanilla extract
3 large
eggs
3 Tbsp
all purpose flour
1 tsp
baking powder
3/4 tsp
salt
3/4 c
white sugar

Step-By-Step

1Cook carrots until tender in boiling salted water. Drain and mash.

2Stir in butter, vanilla and eggs. Mix well.

3Sift together flour, baking powder, salt and sugar. Stir well into carrot mixture and blend until smooth.

4Pour into buttered casserole dish. Bake 45 minutes at 350 degrees.
