This recipe is one I got from my Aunt Becki. She makes this one for Christmas Dinner. I like it best with Easter Dinner to accompany ham!

Ingredients

8
potatoes, boiled and peeled
1 pt
sour cream
2 tsp
salt
1 bunch
green onions, chopped
1 3/4 c
grated cheddar cheese
1/4 tsp
pepper

Step-By-Step

1Skin boiled potatoes and chill.
2Grate potatoes into large bowl. Add 1 cup cheddar, sour cream, salt and pepper. Stir to combine and put in casserole dish. Top with remaining cheddar and onion.
3Bake covered at 350 degrees for 40 minutes.
