Mexican Baked Rice

Tired of just rice so I flavored it up to make a great side dish for any entree.
Served it for friends an it was a hit.

Ingredients

2 Tbsp
olive oil
2 Tbsp
butter
1/2 c
diced onin
1/2 c
diced green pepper
1/4 c
canned jalapenos
1/2 c
chicken broth
14 oz
can diced tomatoes with juice [no salt added]
11/2 c
minute rice uncooked
1 tsp
tarragon
1 tsp
oregano
1 tsp
parsley
s+p

Directions Step-By-Step

In a large skillet saute onion and pepper in oil and butter.
Add rice and and cook five minutes stirring often.
Then add jalapenos, broth and tomatoes, stir well and bring to a boil. Mix in herbs, S+P and bring to a boil. Transfer to a casserole dish and bake at 350 till all the moisture is absorbed by the rice.
