kj's fried rice

I had a large family who brought their friends to visit, sometimes for a long time. Money always an issue, so rice was on the table most of the time, along with beans of all kinds. We ate it with fry bread, sweet cornbread, homemade tortillas or bread. Add some fried potatoes and even today, is my favorite supper dish. Can also add peas, carrots, corn and bell peppers, etc to this

Ingredients For kj's fried rice

  • 1 pkg
    rice of choice-works good with either one
  • 1/2 lg
    onion-chopped
  • 1 Tbsp
    salt, pepper
  • 1 tsp
    basil, parsley, dill
  • 1/2 tsp
    crushed red pepper spice
  • 1 Tbsp
    minced garlic
  • olive oil

How To Make kj's fried rice

  • 1
    Spray cast iron skillet with "PAM", and add the rice to medium high heat. Add all the ingredients except the olive oil. Stir the rice, mixing the ingredients throughout.

    Now add the olive oil, and mix. Allow the rice to brown, not blacken, so stir it up regularly. It should take about 15 minutes to brown the rice.

    Add enough water to the rice to completely cover about 1 inch above rice. Turn the heat down to medium low. Will want it to barely bubble. Turn down more if cooking to fast. Place lid on the rice and check now and then to see if rice is turning soft. DO NOT STIR!!
