Jacked Up Cheesy Jasmine w/Tomatoes and Cilantro

- 1 c
- jasmine rice
- 1 Tbsp
- 1/4 c
- shredded pepper jack cheese
- chopped tomato
- fresh cilantro
1Cook rice according to directions.
Five minutes before rice is to be done simmering, add sofrito, cheese and chopped tomato. Stir turn heat off but leave on warm burner, cover for another 5min till done.
Remove from stove let sit another 2min. Mix in a dash or more of sriracha. Add fresh cilantro and serve.
Easy flavorful side dish. I enjoyed as vegetarian main dish.
