Ingredients

1 cup long grain rice
1/2 cup chopped onions
1 garlic clove, minced
1 tsp. salt
2 tomatoes, chopped
1 tbsp. parsley
1 cup each: chicken broth, water
1/2 cup tomato sauce

Directions Step-By-Step

Heat 2 Tbsp. oil in skillet over medium heat. Add rice, saute 15 minutes til lightly brown. Add the chopped onion and minced garlic, saute til rice is golden brown. Add salt, tomatoes, chopped parsley, chicken broth water and tomato sauce.

Bring to a boil. Reduce heat, cover and simmer 30 minutes til liquid is absorbed and rice is tender. Add water if needed. this rice complements most main dishes.
