Sweet Potato Croquettes

- 3 cups sweet potatoes, cooked and mashed.
- 1/4 cup butter, softened
- 1 teaspoon salt
- 2 tablespoons brown sugar
- 1/2 cup crushed pineapple, drained
- 1 egg, slightly beaten
- 1 cup dry bread crumbs
- oil for deep frying
1Mix sweet potatoes, butter, brown sugar, salt, and drained crushed pineapple.
Shape into balls 1-1/2 inches in diameter
2Dip each ball in beaten egg and roll in bread crumbs.
3Deep fry in oil 375 - 385 degrees until brown
