This is a casserole that has been served at holiday meals since I was a young girl.

Ingredients For sweet potato casserole

  • 3 c
    sweet potatoes,mashed (about 4 large potatoes)
  • 1 tsp
    vanilla extract
  • 1/2 c
    milk
  • 1 c
    sugar
  • 2
    eggs
  • 1/2 c
    melted margarine
  • **TOPPING**
  • 1 c
    brown sugar, light
  • 1/3 c
    flour
  • 1/3 c
    melted margarine
  • 1 c
    chopped pecans
  • **PREHEAT OVEN 325 DEGREES**

How To Make sweet potato casserole

  • 1
    Boil sweet potatoes in a large pot of boiling water. When tender, remove and peel off skin. Mash 3 cups of potatoes and place in a large bowl. Add vanilla, milk, sugar, eggs, and margarine and mix thoroughly. Place in a greased casserole dish.

    Mix the topping ingredients together in a small bowl. Sprinkle on top of the sweet potato casserole. Bake at 325* for 30 minutes.

    note--you can use canned yams if you do not have access to fresh potatoes. 2 cans equal 3 cups of sweet potatoes.
