Roasted sweet potatoes w/ maple glaze

- 2-1/2 lb
- sweet potatoes, peeled, cut into 1-1/2" pieces
- 1/3 c
- pure maple syrup
- 2-1/2 Tbsp
- melted butter
- 1 Tbsp
- lemon juice
- 1/2 tsp
- each, salt and pepper
1Heat oven to 400. Layer potatoes in a 9" x 13" roasting pan. In bowl, whisk together maple syrup, butter, lemon juice, salt and pepper.
2Pour sauce over potatoes, toss to coat. Cover, bake 15 mins.
3Uncover, stir. Cook, stirring every 15 mins, for 45 more mins.
