Ingredients

4 large
potatoes (peeled and chunked)
3 large
garlic cloves
1 tsp
salt
2 Tbsp
soft butter( unsalted)
1 Tbsp
sour cream
3/4 c
fresh spinach (chopped)

Step-By-Step

1In a saucepan boil potatoes and whole garlic and salt till done.
2drain water add butter and sour cream, mash till creamy.
3stir in spinach, sprinkle with parmigiano reggiano. Serve as a side or topping.
