I had dinner with my daughter In law and my granddaughter last night and this was the side dish she made to go with barbecue crockpot chicken and homemade applesauce. I was so impressed with these sweet potatoes, I had to share them with you all! They are delicious! Loved the addition of chili powder and the coconut oil was a new and wonderful taste that made these sweet potatoes amazing! If you’re new to coconut oil, as I am, you’re in for a treat. Virgin coconut oil has a texture similar to butter, and has a naturally subtle coconut flavor that perfectly complements food and is heart healthy

Ingredients For megan's coconut roasted sweet potatoes

  • 3/4 lb
    sweet potatoes, peeled and cut into 1/2-inch chunks
  • 1 1/2 Tbsp
    virgin coconut oil, melted or softened
  • 3/4 tsp
    kosher salt
  • 1/4 tsp
    chili powder
  • 1/4 tsp
    cinnamon, ground
  • 2 tsp
    light brown sugar, packed

How To Make megan's coconut roasted sweet potatoes

    Preheat oven to 350 degrees. (melt coconut oil) treat it as you would butter.

    In a large bowl, toss together diced potatoes, coconut oil, salt, cinnamon and chili powder. (reserve the brown sugar for later)

    Spread the potatoes in an even layer on a large baking sheet. Roast, tossing occasionally, until soft and caramelized, about 45 mins to 1 hour

    Pull the pan out of the oven and sprinkle the brown sugar over the top of the potatoes, toss and let sit for 5 minutes. Serve and enjoy these delicious potatoes as a side dish instead of the usual. Much healthier too!
