1You can use homemade mashed potatoes or instant depending on your preferrence. In a large bowl mix potatoes with sour cream and mix well.
2Add your cooked crispy bacon (I have used real bacon pieces as an easy substitute) I advise that you use real bacon and not immitation bacon bits for better results.
3Mix half of your shredded cheddar, chopped green onion with your potatoe mixture until well blended. Salt and pepper to taste. Top with remaining cheese and bake at 350 for 30 minutes until cheese is melted.
4The great thing about this recipe is that you can adjust the amount of each ingredient to suit your own taste. If you enjoy more or less cheese, bacon, sour cream, or green onion you can make it they way you want and it will still turn out great.
