I grew up in Nebraska as most of you know, there we have a grocery store chain called Hy-Vee, they make some of the best twice baked potatoes. And I am currently living in Houston Tx, and no where close to a Hy-Vee, So for Father's Day 14, I made my own to serve to my amazing hubby and father of three. And I must admit they tasted AMAZING!! (better than Hy-Vee's)Shhh don't tell them I said that! :P I Hope these find your way to your dinner table soon! Enjoy

Ingredients For lizzy's twice baked potatoe's

  • 6 lg
    potatoes, baked
  • 2 c
    sour cream
  • 1 bunch
    scallions,chopped
  • 2 tsp
    pepper
  • 4 tsp
    salt
  • 4 Tbsp
    fresh dill or 2 tsp. of dried
  • 4 Tbsp
    dried parsley
  • 3-4 clove
    garlic, minced
  • 1/2-3/4 c
    heavy whipping cream or milk
  • 4 Tbsp
    butter softened at room temp.
  • 8 slice
    bacon, cooked and choped
  • 1 1/2 c
    fresh mozzarella cheese
  • 1 c
    sharp cheddar cheese
  • SAVE SOME SCALLIONS AND CHEDDAR CHEESE TO TOP THE POTATOES

How To Make lizzy's twice baked potatoe's

    Preheat oven to 350 degrees F (175 degrees C). Wash and place your potatoes on tinfoil and sprinkle salt, wrap up tight and place in the oven for 1 hour or until soft to the touch.

    If short on time you can bake the potatoes in the microwave, 10 minutes on high heat for 2 potatoes, 15 minutes for 4 potatoes. The skins of microwave baked potatoes aren't nearly as crispy, so you may want to rub a little olive oil on them and finish them in a conventional oven at 400°F for 10 minutes.

    If you are including bacon as one of your mix-ins, while the potatoes are cooking, cook the bacon strips in a frying pan on until crisp. Drain on paper towels. Let cool. Chop up and set aside.

    Allow the potatoes to cool to touch. Slice the top third lengthwise off the potato. Use a spoon to scoop out the insides, forming a potato "canoe", leaving about 1/4 inch of potato on the skin.

    Place the scooped out potato, sour cream, cream/milk, butter,bacon,scallions garlic and herbs into a large bowl. Mash with a potato masher.

    Spoon fillings into the potato shells. Sprinkle with extra toppings. And bake for additional 15-20 at 375*
