This is a superior garlic mashed recipe! I prepared them the first night and served as a side to a ribeye steak - delicious! We had them for leftovers the next night with pork chops and they might have even tasted better!

Ingredients For garlic mashed potatoes with parmesan

1head garlic

2 lb(about 4 large) red potatoes, scrubbed and unpeeled

2 Tbspbutter

2 Tbspsour cream

2 Tbspmilk

3 Tbspparmesan cheese

4green onions, chopped (including green stem)

1/4 tspcoarse ground black pepper

salt, to taste
How To Make garlic mashed potatoes with parmesan

1Cut 1/4-inch off head of garlic and discard. Wrap garlic in foil and roast in 400 degree F. oven for 40 minutes.

2Meanwhile, place potatoes in large pot and cover with water. Heat and boil about 20 minutes or until tender; drain.

3Slightly mash potatoes and add butter, sour cream, milk, Parmesan cheese, green onion, pepper and salt to taste. Continue mashing until smooth. Serve hot.

4Squeeze roasted garlic from head and stir into potato mixture.
