Ingredients For cajun potato salad

2 lbsmall red potatoes

1/2 csliced green onion

6 Tbspcider vinegar

6 Tbspvegetable oil

2 cgarlic, minced

1/2 tspcayenne pepper

1/2 dashchopped red onion

1/4 cminced fresh parsley

1 lbcajun sausage, sliced

1 Tbspcreole mustard

1/2 tsppepper
How To Make cajun potato salad

1Cook potatoes in boiling water for 20 to 30 minutes or until tender. Drain. Rinse with cold water and cool completely.

2Cut into 1/4 inch slices, place in a large bowl.

3Add onions, parsley, and 3 tablespoons vinegar and toss.

4Ina medium skillet, cook sausage in oil for 5 to 10 minutes or until browned. Remove with a slotted spoon and add to potato mixture.

5To drippings in the skillet, add mustard, garlic, pepper, cayenne, and remaining vinegar. Bring to a boil, whisking constantly.

6Pour over salad and toss gently. Serve immediately.
