Ingredients

2 large
idaho potatoes
4 slice
bacon, quartered
1/2 c
green onions, chopped
2 Tbsp
parmesan cheese, grated
1/2 c
sour cream
1/2 tsp
salt
1/2 tsp
freshly ground white pepper
butter
paprika

Step-By-Step

1Scrub potatoes and bake 1 hour at 400F.
2Grill bacon pieces until crisp.
3Drain off bacon fat except 3 tablespoons.
4Add green onions and saute slowly.
5Cut potatoes in half lengthwise and scoop out the inside into a skillet, taking care to retain shells intact.
6Add cheese, sour cream, and salt and pepper to potato, green onions and bacon, mixing and mashing to blend thoroughly.
7Return the skillet to low heat and heat through.
8Stuff mixture into potato skins.
9Drizzle with melted butter, and sprinkle with paprika.
10Bake 15 to 20 minutes at 350F.
