Ingredients For balsamic roasted onions and potatoes

  • 1 lb
    red onions, peeled and sliced 1/2 inch thick
  • 3 lb
    potatoes, peeled and sliced 1/2 inch thick
  • 1 c
    butter
  • salt and freshly ground black pepper
  • 6
    sage leaves, ghopped
  • 3/4 c
    balsamic vinegar

How To Make balsamic roasted onions and potatoes

    Preheat oven to 400 degrees
  • 2
    Melt butter in a large skillet, add potatoes and onions, stir to coat
  • 3
    Cook over medium heat stirring occasionally until golden brown
  • 4
    Season with salt and pepper, add sage and 1/2 the vinegar and mix
  • 5
    Place in an oven proof dish, cover and bake for 20 minutes
  • 6
    Add remaining vinegar and bake uncovered for 20-30 minutes or until potatoes are tender
