almost paleo cranberries and breakfast crepes

Last night while we were eating soup and salad I had started cranberries on the stove. wanted to use them without adding the refined sugar we are trying to get away from. Didn't quite make it but close. cranberries serves 6-8 the actual crepe recipe yields 8 or more the filling will do 4 crepes enough for two people

Ingredients For almost paleo cranberries and breakfast crepes
- CRANBERRY SAUCE

1 pkg(12 oz) cranberries, fresh

1/3 cdark brown sugar (will use honey next time)

1 tspcinnamon

How To Make almost paleo cranberries and breakfast crepes

1Add cranberries, sugar and cinnamon to a pan with 3 cups water and sugar and bring to boil and simmer until thickened. We had some as dessert last night and made crepes for breakfast today.

2CREPE RECIPE 1 1/2 c spelt or almond flour 2 c cold oat milk 2 Tbsp honey 1/2 tsp baking powder 1/8 tsp salt 2 eggs mix together ingredients and fry in a hot pan to make thin crepes for recipe below

3cranberry cream cheese crepes Combine an 8 oz package of room temperature cream cheese with 1/2 cup cranberry sauce from recipe above. mix well and put into four crepes and roll them closed. put two on each plate and microwave 30 seconds to warm slightly and serve. I ate them as is Eric added syrup
