This recipe was given to me by my daughter.It's one of the best squash recipes that I've ever tasted.

Ingredients

2 lb
yellow crooked neck squash
1 c
water
2 small
onions, chopped
2 tsp
butter or margarine, melted
1 1/2 c
shredded cheddar cheese
1 1/4 c
round buttery cracker crumbs, divided
1/4 tsp
salt
1/4 tsp
pepper
4 slice
bacon, cooked and crumbled
2 large
eggs, lightly beaten

Step-By-Step

1Combine squash and water in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until tender.Drain well, and mash. Drain again and set aside.

2Saute onion in butter in large skillet over medium heat until tender. Combine squash, onion, cheese, 3/4 cup cracker crumbs, salt and remaining three ingredients; stir well.

3Spoon mixture into a lightly greased 2 quart casserole; sprinkle with remaining 1/2 cup cracker crumbs. Bake, uncovered, at 350* for 40-45 minutes or until throughly heated.
